Having a person who has Celiac Disease in the home has made my gluten filled dinners no longer a option. It was time to rethink our recipes. I typically make everything from scratch and yes it always involves flour it seems. One real hiccup I came upon as I have mentioned before is the recipes that use condensed cream soups. Finding a gluten free and corn starch free version lead me to pricey rather watery and tasteless cans of yuck. So I decided to make my own. This one is Gluten Free Condensed Cream of Mushroom Soup. Even my gluten eater loved the taste.

I used it in a recipe that I have made many times but now can make gluten free!! Fry up a pound of  hamburger once cooked, drained and mixed with the soup recipe below. heat until bubbly. In a 9×13 you put a layer of store bought frozen tater tots. Top with the hamburger mushroom soup mixture and sprinkle with cheese and cook at 425 for 35 min.

Instructions
  1. In a 2 quart pot, on medium heat melt the 2 Tbsp pf butter with the 3 Tbsp of gf flour. Stir until combined. You will find it will become a creamy paste. Let cook for about 2 min stirring often until the flour is cooked and slightly toasted. ( it will get a light golden look to it) Then gradually add in the stock while stirring until the mixture is smooth.
  2. Add milk and spices to the pot. Sit until combined. cook for 1 min. Add chopped mushrooms. Cook on medium heat for 5 min until the soup has thickened.
  3. Either use the soup immediately in a recipe or put in airtight container and store in fridge for up to one week.

Slow Cooked Barbecue Beef

While laying in the hospital for the last week I got tons of time to look through magazines and watch Food Network! Nothing worse than reading about and watching food when you cannot eat. None the less I came home with some great recipes and ideas!

This first recipe appealed to me because I love all things beef. To top it off it cooks in the crock-pot. I love low mess, no fuss recipes! To add extra love to the recipe is the fact that you use the left overs to make a sec0nd meal the next day. I gave it a try and boy I was not disappointed. Both recipes are delicious!! I am going to share the main recipe with you on this post and then on another post show you what to do with the left overs. I am sure you will love this as much as my family and I did!

TIP: This recipe calls for a few spices that you may not use very often. I buy these spices in the bulk section of a local store. I buy just the amount I need, cutting the price way down, and there is no waste.

  1. Combine the brown sugar, chili powder, cumin, celery salt, garlic and pepper in a small bowl and mix. Rub all over the beef, then transfer to slow cooker. Combine 3/4 cup of ketchup, the vinegar and Worcestershire sauce in another small bowl and mix. Pour over the beef along with 3/4 cup of water. Cover and cook on low, 8 hours.
  2. Remove roast to a cutting board and let rest 10 minutes. Meanwhile skim off the excess fast from the sauce; stir in the remaining 1/2 cup of ketchup. Reserve one-third of the beef ( about 12 ounces) and 1 cup of the beef sauce for tomorrows left over recipe called “Southwestern Beef Hash”.
  3. Serve beef with sauce poured on top. I added some homemade potato salad. Add some rolls or corn bread and your good to go.
